Admittedly, a raw chicken isn't exactly the most appetizing thing in the world. And I will even go one step further to admit that after nurturing my little backyard hens for a year, the sight of a raw chicken makes me feel a little bit guilty these days. I'm sorry, Myata!
That's not to say, however, that I feel so guilty that I avoid roasting chickens. Because as unappetizing (and guilt-inducing) as the sight of a raw chicken is, dayum do they taste good when they're roasted.

The Perfect Roast Chicken
1 (3 1/2 to 4 pound) Whole Chicken
1 Medium Lemon
2 Celery Stalks
5-6 Whole Garlic Cloves (with the skin on!)
Lots of Fresh Herbs (rosemary, thyme, sage, parsley)
Salt and Pepper
