I've been pretty quiet this summer. Not that I am ever that prolific on the "eat" blog, but I did have high hopes I'd at least be consistent with my posts.
It's August and I'd say I did manage that last part - I have been consistently silent.
Ah, well. It's never too late to start doing better, right?
In that spirit, I'm sharing this recipe I made recently for Nutella cupcakes. They are easy to make. They are delicious.
The cast if characters for the cupcakes includes the usual suspects: flour, eggs, sugar, baking powder and soda, vanilla and of course, Nutella.
The recipe made almost exactly a dozen cupcakes. Very convenient.
I use vegetable oil in place of butter in cupcake recipes - it tends to create a lighter, easier to make cupcake. But do your thang if you'd rather go for butter.
The batter turned out to be pretty thin.
I made the Nutella buttercream frosting by combining a few recipes I found online AND by following the tips from Jamie Oliver's Food Tube. Which you should totally check out if you haven't already...
The best tip I found for making great buttercream? Have some patience! You really have to beat buttercream at each step. The butter by itself, the butter and powdered sugar, the butter, powdered sugar and flavorings. Each steps needs a few solid minutes to get really fluffy and delicious.
Once the cupcakes were cooled, I used an old fashioned spatula to frost them.
Not too shabby looking with a some dark chocolate shavings.
Easy Nutella Cupcakes
Gets you almost exactly 12 cupcakes!
1 1/4 cups gluten free all purpose flour (or regular for those who can handle the wheat!)
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup sugar
1 1/2 teaspoons pure vanilla extract
1/2 cup oil (I used vegetable)
1/2 cup buttermilk (I added a few squeezes of lemon juice to 1/2 of regular milk)
1/2 cup of Nutella
For the frosting, I used a very basic buttercream recipe from watching this amazing video (and adding Nutella into the mix!)
